Menu Plan Monday Sept 21-26


This has by far been my longest bloggy break. Between computer issues, church, summer break moving swiftly into starting school, life has just been BUSY! I am ready for my favorite season....fall.

Somehow this week, I wound up with 2 roasts, a turkey, 2 lbs of ground meat, and some chicken in my refrigerator. So my menu this week will be based on that. Several crockpot recipes too since our home church is having missions conference later in the week.

Monday-Fried potato casserole (kind of like tater tot casserole)
Tuesday-Hot beef sandwiches
Wednesday-Turkey, mashed potatoes, and salad (cooking a whole turkey, using some leftovers for Thursday's dinner and the rest will go into the freezer for soup)
Thursday-Turkey pot pie
Friday-Chicken Alfredo
Saturday-leftover buffet

I have finally found the perfect Sunday-after-church meal for our family. Eggs & toast. Sounds silly but it is nice not having to think about what I am going to make, just have the same thing each week on that day.

Menu Plan Monday 7-20-09

Yay! I actually planned my meals this week! This summer is FLYING by and I am just now catching up on things. Here is my plan for this week.

Monday - Vegetable soup

Tuesday - Chicken with homemade pesto, sauteed squash & zucchini, and brown rice.

Wednesday - Quesadillas

Thursday - Chicken salad

Friday - Pizza with whole wheat crust

Saturday - Spaghetti

Sunday - Meatloaf, boiled red potatoes, and salad.

I am going to be getting my propane tank filled this week so that I can start grilling! We haven't grilled anything yet this summer and I am eager to get going ;o). For more menu ideas, please see Laura at Orgjunkie.com.

Menu Plan Monday


A new week....a new plan. I didn't stay on last weeks' plan very well. We wound up having Pizza on Monday because we knew Melissa would not be able to eat it for a while after she got her braces. We had a few other things come up also. I did make the Santa Fe casserole, it was sooooo good! We had vegetable soup instead of potato soup or bean soup.
Menu planning really does help my day go smoother. It only takes about 25-30 minutes, once per week to make a menu and then I don't have to "think" during the dinner rush....I already know what we are having. This week, I am cooking one of my cheap-o turkeys, since I didn't get it out and thawed in time to cook this past Sunday.
Monday-Beef and rice, with baked potatoes and steamed broccoli
Tuesday-Potato soup
Wednesday-Chicken, fried potatoes, corn, and spinach salad.
Thursday-Taco salad. Our Pastor and his wife are coming to dinner. Pastor and my husband are going to drive around our area of town to look for possible meeting locations for our new church plant! More on that later...
Friday-Turkey should be thawed by then.
Saturday-Turkey tetrazini

Menu Plan Monday 1-5-09



It has been a long time since I did a full week of meal planning. Today is a new day and we are getting back on track! I'm kinda glad the holidays are over so I can get back into my routines. Here it goes for this week:

Monday: Chicken/potato soup

Tuesday: "Breakfast" dinner. Eggs and bacon. I have another daughter getting braces today and we needed something soft!

Wednesday: Santa Fe Casserole Bake

Thursday: Mixed bean soup & corn bread

Friday: Stuffed Chicken Breast

Saturday: Grilled cheese sandwiches, soup, and salad.

Sunday: Turkey (one of my cheap-o turkeys I got during the Thanksgiving season, I have four of them in the freezer-one per month during the winter and early spring).

Menu Plan Monday November 3, 2008

I just got my new Kraft Food Magazine on Saturday and am enjoying browsing through it. There are a few of the recipes that I will try this week.

Monday- Tater Tot casserole (our modified version) I was actually supposed to make this 2 weeks ago and it just didn't happen. I added carrots, celery, and a can of diced tomatoes. It was pretty good!

Tuesday- Election Day! Easy Italian Pasta Salad. We are letting the old children stay up and watch the election results as they come in (goes along with our unit study!); thus snacks and desserts lol. Snack of tortilla chips and cheeseburger dip. Fruit pizza for dessert

Wednesday-Hot Beef Sandwiches and salad

Thursday-Chicken Pasta Bake

Friday-Homemade pizza. I posted my recipe for the crust and the sauce here.

Saturday-Chili with cornbread

Sunday- Eggs and bacon for after church. I still have not come up with a wonderful solution of a light dinner after the Sunday evening service at church.

Meal Plan Monday Oct 27, 2008



This weeks' Meal Plan will be super easy! I don't have to cook for 2 nights this week :o) Be sure to check out Laura at Orgjunkie for more ideas.

Monday- dinner at Mother-in-law's house

Tuesday- soup dinner at church for a revival meeting

Wednesday- Chicken Pot Pie (didn't get to make this last week so I am looking forward to it, I will post a recipe Wednesday)

Thursday- Spaghetti, salad, garlic bread

Friday- Tacos!

Saturday- Family fun night in our house to celebrate the end of a very good first quarter of school. We will have pizza, popcorn, pumpkin bread (not necessarily all together...just planning for the afternoon and evening of games and some good ol' family fun)

Sunday- I really need to work on Sunday's meals. Having a hard time coming up with something light for after evening service. Any suggestions? My goal is to have something in the crockpot waiting for us when we arrive home at 12:30ish and something light at about 8:30ish. Throw your ideas my way!

Menu Plan Monday Oct 20, 2008



I haven't participated in this in quite a while it seems. Here goes the new meal plan for this week!

Monday -chicken, tomato, corn, rice soup (sooo easy! I just literally threw in 4 pieces of cooked, boneless, skinless chicken, 1 bag of frozen corn, 1 can of diced tomatoes, 1/2 onion, 2 celery stalks and 1 box of Swansons chicken broth. We served it over rice)

Tuesday-the Duggar famous Tater Tot Casserole

Wednesday-bean soup

Thursday-Chicken Pot Pie (having company)

Friday-meatloaf

Saturday-leftovers

Sunday-church dinner (we are taking salad and dessert)

Menu Plan Monday


I floundered around for 2 weeks with no meal plan, again. I made my plan on Friday this time and it seems to work better for me. Here it goes:

Sunday-Hot Beef Sandwiches (recipe below, with pics!) Monday-Brats on the grill, pasta salad
Tuesday-Chicken Enchiladas Wednesday-Breakfast dinner Thursday-Steaks (for mom & dad) and hamburgers (kids) and baked potatoes
Friday-leftover buffet Saturday-Grilled ham sandwiches


Hot Beef Sandwiches (crockpot)


3 lb Roast; 1 large onion, chopped; 3 stalks celery, chopped; 1/4 C vinegar; 1 clove garlic, minced; salt & pepper

Spray your crockpot bowl with cooking spray. Put roast in and put chopped onion and celery on top. Mix vinegar with garlic and salt & pepper and pour on top. Cook on low for 8 hours. After it is tender, shred with 2 forks. We put the meat on Onion buns that I get from the Wonder Bread store. YUM! Jasons favorite!

Menu Plan Monday June 30-July 6




Running late again... I seem to only get to my menu planning every other week, so I am going to try something radical.....make a TWO week plan.

Monday-Potato Soup (the weather was only in the 60's!)

Tuesday-Pizza

Wednesday-Chicken Stir Fry

Thursday-dd's 10th birthday. She wants chicken & grape kabobs :o)

Friday-dd's birthday party, hamburgers on the grill

Saturday-invited to a BBQ!

Sunday-Lunch (our main meal of the day on Sunday) at MIL's house!

I did plan out next Monday-Wednesday also but then I came to a standstill :o( Maybe a plan every week and a half? All in all, it will be an easy week! That should get me a head start for next week...

Menu Plan Monday June 2-8, 2008



I sure hate those weeks that I don't plan! Last week was not fun, not knowing what was for dinner until time to throw something together. This week will be better!

Monday-Swiss Steak (in the crockpot)

Tuesday-Chicken/spinach salad (yummy in the warmer weather!)

Wednesday-Hot Beef Sandwiches (another crockpot) with Onion buns, spinach salad

Thursday-Lentil tacos

Friday-Spaghetti with whole wheat pasta

Saturday-welcome to the leftover buffet!

Last week, I did try some new recipes. I made yogurt!! It was super easy and the kiddos loved it! You can also use this same basic recipe to make cream cheese. You can find out how to make it on Keeping The Home. Emily tried the Healthy Oatmeal Chocolate Chip Cookie recipe from here. They were really good! Definitely a keeper.

Menu Plan Monday 5-19-08


We got a new (to us) grill last week and I have used it 3 times already! YUM! Here is the plan for the week!
Wednesday-Crockpot roast, potatoes, and carrots
Thursday-Turkey sandwiches
Friday-White Pizza (recipe below)
Saturday-Church picnic (I am taking pasta salad and a birthday cake-it is also my son's birthday!)
Recipe for White Pizza:
Your choice & quantity of pizza crust
Ranch Dressing
mozzarella & provolone cheese
bacon (cooked and chopped or crumbled)
chicken (cooked in some olive oil and garlic powder)
Spread the ranch dressing on the crust (instead of pizza sauce), add cheeses and meats and cook at 425 degrees for about 12 minutes. YUM!!!

Menu Plan Monday


Here is my weeks' menu plan! Last week, I stayed on track on every night except Saturday (woohoo!). I am loving orgjunkie's Menu Plan Monday, it is keeping me on track. This week we are having company on Monday and a birthday party on Saturday. I spent $75.65 (there are 8 of us) this week for groceries. This does not include party food for Saturday (I will get that the day before the party).
Monday (guest day, family of 10 plus us)-Chili Chicken & Cheese Quesadillas
Tuesday-Potato Soup and Corn Bread
Wednesday-Chicken & Rice Mix, Spinach Salad, and Sweet Potato Casserole
Thursday-Mixed Bean Soup (I will add any leftover Chicken & Rice from Weds to the soup, very yummy!)
Friday-Ham, Fried Potatoes, Spinach Salad, and Corn
Saturday-Sloppy Joes and Dino Mac & Cheese! for my 4yo bday!
Looking at my menu, it doesn't seem like much fruit & veggies. We eat fruit with our breakfast and for snacks we have a fruit or veg. We are trying to eat healthier and spend less on groceries at the same time. We used to spend about $120 to $130 per week on groceries but have gotten it down to $70-$85 per week in the last 2 months. It takes a lot of planning and NO impulse buying!! BUT, it can be done :o)

Menu Planning!

'Three Meals a Day...'



When my children used to ask me around 3:30ish every day, "What's for dinner?" I would reply, "It's a surprise!"--because I wouldn't know myself!! A few years ago, my husband suggested that maybe we could have dinner at the same time every day. It would be a beginning step to have an orderly day. The same time?! That was asking a bit much. You see, I am disorganized at heart. Thankfully, my husband has lots of patience and grace! I have gotten much better, but still have a lot to learn. I want to share something that has helped me tremendously. A MEAL PLAN!





  1. Menu planning has wonderful benefits. You know exactly what you are having so you know what you need at the grocery store.

  2. Because of #1, you are saving money (if you stick to your list, in other words NO IMPULSE BUYING!)

  3. You will eat healthier (no pre-packaged meals)

  4. A balanced diet

  5. No more rushing around at 7:00pm trying to figure out what to have

  6. No more cereal for dinner :o)

  7. When you add the same time of eating everyday to this, no more whining kiddos

To begin, use what you have! Inventory your pantry, cabinets, and freezers. You might be surprised! When my husband suggested we do this, I was quite shocked to find that we had 32 lbs of chicken and 15 lbs of ground meat (plus other meat) in our chest freezer (yes, thirty-two). The conversation went something like this:



Jason: "did you know you had 32 pounds of chicken in the freezer?!



Me: "well, no, but I only bought it when it was on sale!"



In other words, if you inventory first you won't have 32 lbs of chicken with nothing to cook for dinner.



To inventory, break it down into categories: Freezer items would be: meats, vegetables, fruit, and misc. Pantry items: canned goods, boxed/bagged items, condiments, snacks, breakfast items, baking items, beverage items (like coffee, tea, kool-aid, etc). It is always easiest for me to see something on paper. Write it all down!



Next, sit down with a few favorite cookbooks, favorite Internet recipes, or magazines (I love the Kraft Food & Family magazine! It comes every quarter and it is FREE. To sign up, click here. Also have with you a calender with large blocks to write in. I created on of these that I use weekly. You are welcome to download it here.



Fill in each block with a meal! Also, if you are using the calender, you can see dates that you may have something planned and therefore you can make it a crock pot day, etc. The calender that I made has slots for desserts and snacks. You don't have to have desserts and/or snacks every day! We don't, but the slot is there when needed. Make the system uniquely yours. You know what is best for your family!



It may take a little getting used to, but try it for a whole month. It is generally best if you make your meal plan on the same day each week. Try to do it the day before going grocery shopping. I seem to always get sidetracked if I try to do it the same day as shopping.



You might want to also include a leftover day. Another money saver. Keep your leftovers and have buffet night or throw it all into a soup or casserole! Yum! Have fun!
